Why We're Different
Many events in the plant-based community cater to large groups, who receive instruction from a line-up of speakers. Our events are more intimate, involving no more than 15 - 20 people per session, in a cozy inn nestled in the small mountain town of Saluda, NC.
Most exciting may be the food itself. The plant-based diet is often communicated as a complex and often stringent list of rules – of what you can and cannot eat – and much of it based on a reductionist, ‘tinker-toy’ interpretation of the science. Our definition of a plant-based diet comes straight from our science advisor, Dr. T. Colin Campbell. An optimal plant-based diet consists of a variety of whole plant-based foods, incorporating every part of the plant and a rainbow of colors … and flavor in your food is fine. A little saltiness and sweetness in your food will not hurt you when accompanied by the tsunami of nutrients you get from eating a whole food plant-based diet. Contrary to what you may hear elsewhere, it’s also OK, and in fact important, to eat plant-foods with whole fats, like nuts, seeds, and avocadoes (in moderation of course).
We also take a broader view of healing. Nutrition is important, but healing goes beyond food to encompass every aspect of our lives. We encourage people at our events to examine their lives wholistically, to understand what they can do to experience more complete healing. This seems to happen naturally when we’re sitting around the fire in our small inn, with a small group of newly found friends.
We’ll provide an opportunity for you to disconnect from your technology, and to connect with others and to who you truly are inside. We believe it may be the experience of this human connection that you remember most in the years after your immersion experience.
